SPICED COUS COUS

INGREDIENTS
3 cups cous cous
½ cup dried tart cherries
¼ tsp ground cinnamon
½ tsp paprika
½ tsp ground cumin
½ tsp ground coriander
1 tsp salt
½ bunch fresh coriander
Fresh pomegranate arils (optional)
INSTRUCTION
Place your cous cous, dried tart cherries, spices and salt into a heat proof bowl and stir. Pour over 3 1/3 cups of boiling water with a firm lid or cling wrap on top to seal the bowl. Leave for 10 to 15 minutes (or per cous cous packet instructions) until the cous cous absorbs the water. Fluff the cous cous and season.
Toss through your fresh coriander and serve. For extra festivity add a sprinkle of fresh pomegranate arils.
