KALE SALAD WITH TART CHERRIES

INGREDIENTS

Salad;

• 5 cups kale, roughly chopped

• 1 ½ cups dried tart cherries

• ½ cup slivered almonds, lightly toasted

• 2/3 cups feta cheese, crumbed or cube

Dressing;

• 2 limes, squeezed (1/4 cup juice)

• 1 tbsp Dijon mustard

• 2 tbsp honey

• 1 tbsp white wine vinegar

• 1 clove garlic, crushed

• ½ cup olive oil

INSTRUCTION

1. Place your salad ingredients into a large bowl and toss togeather.

2. Dressing: Add the lime juice, Dijon mustard, honey, vinegar and garlic clove into a small bowl and whisk until combined. Slowly add the olive oil and continue to whisk until the dressing has emulsified.

3. Pour your dressing over the salad, and lightly toss. Serve.
