RADICCHIO QUINOA SALAD WITH TART CHERRIES

INGREDIENTS

Dressing

  • 1 lemon, squeezed (2 tablespoons juice)

  • 2 tsp Dijon mustard

  • 1 tbsp maple syrup

  • 1/4 tsp salt

  • 1/4 tsp cracked black pepper

  • 1/4 cup olive oil


Salad;

  • 1 cup quinoa

  • 1/2 head radicchio, core and thinly slice

  • 1/4 cup dried tart cherries

  • 1/4 cup pistachios, smashed

  • ¼ bunch flat-leaf parsley, roughly chopped


INSTRUCTION

1. Make your quinoa per instructions on pack. Always rinse quinoa to remove its natural coating of saponin (which will taste bitter). As a guide in a saucepan add 1 cup of washed quinoa to 1 ½ cups boiling water. Add a pinch of salt, cover and simmer until the water has absorbed (15 minutes). When ready, fluff your quinoa with a fork and set aside.


2. Dressing: Add the lemon juice, mustard, maple syrup, salt and black pepper into a small bowl and whisk until combined. Slowly add the olive oil and continue to whisk until the dressing has emulsified.


3. Place your cooked quinoa into a large bowl and add your radicchio, dried tart cherries, pistachios, and parsley. Pour your dressing over the salad, and lightly toss. Serve with a few fresh sprig of parsley and season with salt and cracked pepper (optional).
